WILLISTON, N.D. (KUMV) - A new bakery is bringing more than just fresh bread to downtown Williston’s Great Northern Building.

Miller Dough is preparing to open its doors this June, offering artisan sourdough, pastries and a space designed for community connection.

Owner Heather Miller said the idea for Miller Dough started after a trip to Ireland in 2018, where she fell in love with the experience of slow mornings, fresh artisan bread and welcoming bakery spaces.

Now, after years of perfecting her sourdough craft and selling at farmers’ markets, she’s bringing that same feeling to Williston with what she calls an old-world French-inspired bakery.

Miller hopes Miller Dough becomes more than a place to grab coffee and pastries, but somewhere people can gather, enjoy live piano music, local art and simply slow down.

“I went to quite a few bakeries while I was in Ireland, and I remember feeling like I wish we had something like this back at home,” Miller said. “Something that really stood out to me while I was there was that I could eat all the pastries, bread I wanted, guilt-free. Not only that, life was so slowed down. No one was in a rush to leave or go anywhere. And I want to create a community like that here in the bakery, where people can just gather, enjoy a guilt-free pastry with live piano music.”

Miller Dough plans to begin training by the end of the month and officially open to the public in June if construction stays on track.
