Sunflower Parsley Pesto


2.75 oz parsley
3.5 oz sunflower shoots
3.5 oz sunflower seeds
2 cloves garlic minced
1.5 tsp salt
2 tsp lemon juice
1/2 tsp black pepper


Pulse parsley and shoots in food processor.

Add sunflower seeds, blend into a rough “paste.”

Add everything but the oil, pulse until combined, scrape down sides.

Slowly drizzle in 1/2 cup olive oil.

Spreadable Pesto paste will form.

Taste, Season, use as a spread for sandwiches.
