Sunchoke Fritters


1 # sunchokes scrubbed
4oz carrot
4oz potato
1 large shallot minced
3T cornmeal
1tsp baking powder
1/2 cup flour (or gf alternative)
1tsp salt
1/2 tsp black pepper
3 eggs (more as needed)


Shred carrots sunchokes and potato on box grater or food processor

M\ix in shallot

Mix dry ingredients together, then add to veg, season to taste

Add eggs and mix until uniform

Heat oil in large pan (cast iron, etc)

Portion and drop into oil, fry until golden brown.

Serve warm as small bit or side dish. great “hash brown” alternative
