Sausage, Kale and White Bean Soup


1/2# ground pork sausage (italian)
1 medium yellow onion, small diced
1T minced fresh rosemary
1T minced fresh sage
1T salt
2tsp pepper
2 quarts of chicken/vegetable stock
2 cups raw small diced pumpkin (or sweet potato, or butternut squash)
1 bunch of kale, washed, stripped, and chopped
1 can white kidney or cannellini beans (drained/rinsed)


Brown sausage in stock pot, remove sausage, reserve fat.

Sweat onion in same pot, add herbs and seasonings.

Once onions soften (3-4 minutes) add stock and pumpkin

Bring up to a boil, and reduce to simmer. Add kale, beans, and sausage.

Allow to simmer on stove to bring flavors together.

Adjust seasoning, and serve with fresh grated parm, asiago or romano cheeses.
