Peaches and Cream Upside Down Cakes

2 peaches, sliced into wedges
3/4 c sugar (for caramel)
2T water
8 oz butter (melted)
2 whole eggs
3/4c whole milk
1 1/2 cup sugar
1 lemon, zested
2 cups all purpose flour
2tsp salt
1/3 cup white chocolate chips chopped
1 tsp cinnamon
1/2 tsp baking soda
1/2 tsp baking powder


In a saucepan, combine 3/4c sugar and water, and cook until an amber color forms (about 5 minutes)

In the meantime, line a 8in cake pan with a disk of parchment and grease it (or individual ramekins) with peach slices
Pour caramel over peaches

In a bowl, whisk sugar, and butter until smooth, add eggs, and whisk, then milk, and zest.

Add remaining ingredients and fold to incorporate
Pour over peaches, and bake in 350 degree oven until set
Let cool, run pairing knife around edges and invert cake. Discard parchment, and serve warm
