Kimchi Fried Rice


1T sesame oil
1/2 cup thin sliced onion
1/4 cup zucchini or eggplant
1/4 cup mushroom
1/4 cup beansprout
1/2 cup napa cabbage shredded
2T kimchi (or more if preferred)
1tsp sriracha (more if you like it spicy)
2tsp rice wine vinegar
2 cups day old rice
Saute veggies in oil


Saute veggies in oil

Add kimchi, and warm through

Add sriracha and vinegar and day old rice

Cook on high heat until rice gets a bit “sticky/crispy”

Serve with sliced green onion, over easy egg, etc!
