Honey CousCous Pasta Salad
2 cups couscous (uncooked)
1 cup raisin
1 cup chopped almond
2T chopped parsley
1/2 red onion, small diced
4-6 oz of prepared vinaigrette (recipe below)

1/4 cup honey
1/2 cup white wine vinegar
1 small shallot
1/2 tsp salt
1/2 tsp pepper
2 cups vegetable oil


To make Vinaigrette:

Mix everything but oil in blender until smooth
slowly drizzle in oil on low speed until combined.

Use within 7 days.

To Make Salad

Cook CousCous per instruction on package, drain, rinse.

Mix everything together.

Taste, and Season with salt and pepper, and refrigerate.

Toss with salad greens and a little extra dressing to make a light lunch, or serve as a side dish.
