Chef Tyler's Stuffed Acorn Squash



Ingredients

Acorn Squash (split and seeded)
Olive oil
Salt and Pepper
Pork Sausage
Diced Onion
Diced Vegetable (sweet potato, squash, carrot, mushroom, etc)
Dried Cranberries (or other dried fruit of choice)
White wine
Stock (chicken/veg)
Wild Rice (pre cooked)
Bread crumb
Butter melted
Garlic (minced)

Season squash with olive oil salt and pepper
Bake cut side down in a 350 deg oven for 30 min

In the meantime:
brown sausage
add onion, cook until translucent
add other vegetables and fruit
add white wine, and reduce liquid by 75%
add stock and wild rice
simmer
Taste
Season

Directions

Toss breadcrumb with butter and garlic
Stuff mixture into acorn squash
top with breadcrumbs
return to oven
bake until bread crumbs are golden brown
