Chef Tyler's Polenta with Pumpkin



Ingredients

• Polenta (cooked per package instruction)
• Heavy Cream
• Mascarpone (or cream cheese)
• Pumpkin
• Kale
• Dijon mustard
• White wine vinegar
• Olive oil
• Salt and Pepper
• Goat Cheese
• Pumpkin seeds

Directions

1. Cook polenta to package instructions, add heavy cream and mascarpone for richness
2. Sautee pumpkin and kale in pan with olive oil.
3. Add Vinegar, dijon, salt and pepper
4. Serve over polenta
5. Sprinkle goat cheese and pumpkin seeds
