Chef Tyler's Panna Cotta


2 cups heavy cream
1/4 cup sugar
1 tsp Vanilla (or other flavoring)
1 packet of gelatin
3T cold water


• Heat cream and sugar in pan, until dissolved, remove from heat
• Add flavoring, cover, steep for 20 minutes
• Meanwhile, add cold water to gelatin, in bowl, "bloom" for 5-10 minutes
• Reheat cream, and pour over gelatin, whisking until dissolved.
• Pour into individual ramekins, or wine glasses, or serving vessel of choice
• Chill for at least four hours, or overnight
