Chef Tyler's Mushroom Ragu



Ingredients

• olive oil
• 1 large yellow onion, peeled and small
• 1 large carrot, peeled and small diced
• 2 celery stalks, small diced
• salt and pepper
• 6 thyme sprigs, leaves only
• 6 parsley sprigs, leaves only, chopped
• 2 bay leaves
• 1/2 c diced tomatoes (seeded)
• 1/4 cup white wine
• 2 Lbs mushrooms (crimini, shiitake, button, oyster, etc)
• Olive oil
• 1/2 c cream or cream cheese, or mascarpone
• 1 c water or stock (as needed)
