Chef Tyler's Fennel Salad



Ingredients

• 1 fennel bulb thinly sliced (fronds reserved)
• 1 apple, cut into matchsticks
• 1 beet (raw), peeled cut into matchsticks
• Pomegranate seeds
• Salt an Pepper
• 2 cups of cooked barley (can use farro, brown rice, or any grain you like)

Sambuca Cider Vinaigrette
• 1/4 cup sambuca, reduced by 50 percent
• 1/2 cup apple juice or cider
• 1 shallot, minced
• Salt and Pepper to taste
• 1 cup of vegetable oil
