1 medium Onion (small diced)
2 stalks Celery (small diced)
1 Carrot (small diced)
2 cloves garlic minced
1.5T minced ginger
2T curry powder
6 cups stock (or water)
6 oz tomato paste
1 can diced tomato
1# lentils (cooked)
salt and pepper to taste
DirectionsCook carrot onion celery over medium heat until soft (about 6-8 minutes).
Add garlic and ginger and cook for 1 minute.
Add curry powder, salt and pepper, cook for another minute on low heat.
Add tomato paste, and caramelize.
Add tomatoes and stock and simmer for 15 minutes until slightly thickened (option to add dried lentils sat this point and simmer until cooked).
Add cooked lentils to thickened “stew,” serve over rice or other grain of choice.
