Chef Tyler's Chocolate Peanut Butter Ganache



Ingredients

• 10 oz chocolate
• 1/2 cup peanut butter
• 1 cup milk, cream, or almond milk
1. Heat milk/cream to a simmer (light bubbles)
2. Pour over chocolate and peanut butter
3. allow to "melt" for a few minutes, before stirring until smooth.
4. Use as desired (tarts, truffles, etc)

Caramel Sauce

• 8oz sugar
• 2.25 oz water
• pinch cream of tartar
• 10 oz heavy cream
• 2.5oz butter
1. Scald cream (bring to boil, remove from heat)
2. heat sugar, water, and cream of tartar in pan
3. cook to golden brown caramel
4. add cream, whisk
5. add butter, whisk
6. cool, use as desired
