Chef Tyler's Buttermilk Scones



Ingredients

7 oz AP Flour
.2 oz Baking Powder
pinch of Salt
.25 oz Sugar
3oz COLD Butter
4oz Cold Buttermilk (or juice)
3oz Filling

1. Sift dry ingredients together
2. "Cut" fat into dry ingredient (by hand or with food processor)
3. Stir in filling
4. In stand mixer, slowly add liquid to mixture, until JUST incorporated
5. Turn out on floured surface, knead, shape and cut.
6. Brush with buttermilk, sprinkle with sugar
7. Bake at 350 for up to 20 minutes, turning halfway through
