Chef Trevor's Sockeye Salmon


1 cup oil
1/4 cup smoked sugar
1/4 cup apple cider vinegar
Marinate salmon for at least 1 and up to 12 hours

Bacon mustard glaze
1/2 cup bacon fat
1/2 yellow onion Minced
1 cup honey mustard dressing
2 tbls Dijon mustard
2 tbls spicy whole grain mustard
2 tbls sugar
2 tbls red wine vinegar
