Chef Trevor's Curry Chicken Cavatapi


Boil pasta in salted water until al dente. Drain pasta and set aside.
Dice carrots and potatoes and blanch in boiling water for 5 minutes, drain and set aside ( you can do the pasta, potatoes, and carrots all together if you're careful)


Saute peppers, onions, peas and garlic with diced chicken breast. Once chicken is fully cooked deglaze with white wine. Add curry paste, pasta, carrots, potatoes and pasta toss to combine and enjoy.
