Chef Ryan's seared halibut with grapefruit and arugula salad


2 peices 4 to 6oz halibut (any lean meat could be substituted)

2 grapefruit cut in supremes

2oz bleu cheese

1 meyer lemon juiced

1/2 fennel bulb shaved

1/2 leek cut into match sticks

2 cups arugula

2 Tbl extra virgin olive oil

2 Tbl unsalted butter (optional)


Sear the halibut with olive oil and butter (you can leave the butter out of you like) for 7 min flesh side down and then flip and sear for 2 more. Combine the rest of ingredients and enjoy.
