Chef Chef Tyler's meringue cookies


2 large egg whites (room temp)
1/4 tsp cream of tartar
1/8 tsp salt
1/2 cup granulated sugar
1/2 tsp flavored extract (vanilla, maple, strawberry, etc)
food coloring (optional)


Mix egg whites, tartar, salt, on low speed in mixing bowl with whisk attachment, until foamy

Increase speed to high, and add sugar, a tablespoon at a time every 15 seconds (or until sugar dissolves)

Mixture should increase in volume, appear shiny, and thick.

Add any extracts and food coloring at this point, stir in.

Attach star or round tip to piping bag, and pipe shapes onto a parchment lined sheet tray.

Bake 225 for one hour. Turn oven off after an hour, but leave cookies in for another hour or longer to full dry out and crisp up.
