Black Bean Quinoa Cakes


2 cups cooked quinoa (roughly 1/2 cup raw)
1 cup black bean puree
2-3 chipotles (canned, in adobo, blended)
3/4 tsp ground cumin
1 whole egg
1/4 cup flour (or GF flour)
salt and pepper to taste


Mix quinoa, black bean, chipotle, cumin, and egg, until well combined.

Add flour, salt and pepper, and mix until just combined (don’t overwork)

Form into patties of desired size.

Fry until golden brown on both sides.

Serve hot, w/ salsas, sour cream, slaws, as a burger
