roasted asparagus (ends trimmed)
soft cheese (brie, fontina, havarti)
bread of choice + butter for grilling
DirectionsToss asparagus in salt and pepper and olive oil, roast until al dente
slice or shred cheese accordingly
Mix equal parts mayo with mustard do make a mustard aioli.
To assemble sandwich spread aioli on both slices, add cheese on both slices (this will ensure the asparagus “glues” in place), Then add a layer of asparagus.
Close sandwich, butter the outside, and place in preheated pan or griddle.
Toast until golden brown on outside and melty on the inside.
