FoolProof Cheese Sauce (without the roux)


265g water
11g Sodium Citrate
285g shredded cheese (from a whole block, not pre-shredded store bought)


Bring water to a simmer, and
Add sodium citrate, dissolve
Add cheese, turn heat to low, use immersion blender to “emulsify”
Blend until silky smooth and cheesy!
pour over pasta, chicken, potatoes, etc!
