Northern cherry glazed lamb chops

Chef Alex Ryles from Broadway Grill and Tavern makes northern cherry glazed lamb chops.


· 1 cup Northern cherries

· 1/2 cup granulated sugar

· 1/2 cup apple cider vinegar

· 1/4 teaspoon ground Cayenne pepper

· 1/2 teaspoon kosher salt

· 2oz unsalted butter

· 4 2-3oz lamb chops

· 1/4 cup roasted apples (peel, wash, dry, bake at 350 degrees for 7 min, cool)

· 1/4 cup 1/2in diced cooked sweet potato

· 1/4 cup 1/2in diced cooked beets

· 1/4 small red onion

· 2oz chopped kale

· salt and pepper to taste


· Place a small sauce pan over medium heat

· Add the vinegar and sugar to the pan and stir together with a wooden/ rubber spoon/whisk

· Allow the mixture to come to a boil and turn a golden brown color

· Add the cherries, cayenne, and ½ teaspoon of kosher salt to the pan and reduce the heat to low and allow the mixture to simmer undisturbed for 2 min

· Remove the mixture from the heat and place in a blender

· Blend the mixture on high for 30 seconds and then set aside

· Place a cast-iron skillet over medium high heat and allow it to begin to smoke

· Place the butter in the skillet and allow it to melt

· Season the lamb chops with salt and pepper and place them in the skillet

· Flip the lamb chops after 1 min and allow them to cook on the other side

· After on minute, place the lamb chops on a baking sheet, smother them in in the cherry glaze and place them in a preheated 350 degree oven for 3 min

· In the heated skillet begin to saute the red onions for 30 seconds

· Add the sweet potatoes and apples to the skillet and saute for 30 seconds

· Add the beets to the skillet and saute for 30 seconds

· Add and stir in the kale to the skillet, remove from the heat source, and salt and pepper to taste

· Place the hash on a plate and stack the lamb chops beside them, pour the remainder of the cherry sauce from the pan onto the lamb chops and enjoy
