Easter Carrot Cake



Ingredients

• 1.5 cups almond flour
• 1/2 tsp salt
• 1 tsp baking soda
• 1 tbsp cinnamon
• 1/2 tsp nutmeg
• 1/2 tsp dried ginger
• 4 eggs
• 1 cup pumpkin
• 1/2 cup maple syrup or coconut sugar
• 1/2 cup melted coconut oil
• 1/4 cup almond butter
• 2 tsp vanilla
• 2 cups finely grated carrots
• 2/3 cup chopped walnuts (or pecans)
• Walnuts and carrots for topping

Cream Cheese Frosting
• 1 (8oz) block Neufchatel reduced fat cream cheese, softened
• 1 container vanilla Greek yogurt
• 1 1/2 cups organic powdered sugar
• 2 tbsp butter or coconut oil , softened
• 2 tsp vanilla
• 1/2 tsp cinnamon
• 1/4 tsp salt

Directions

Bake at 350 for 30-35 minutes.
