The Grill On Main Spices Up Downtown

A local restaurant in Williston is under new management. The Grill on Main is a new business in an old location.

The former Castle Cafe re-opened the first of April, and has generated quite a buzz.

"It's really delicious food," says Colleen Kandra. "It's hot and fresh. The potato salad is the bomb. It really is. 

"It is way better," says Jessica Lager. "Way, way, better. Like the turkey BLT is the best thing."

Lager is a regular at The Grill on Main, and says she likes the way the new restaurant looks compared to how it used to look.

"Of course, we've made some changes to the existing business. It was like what's new and coming, and everyone's anticipating exactly what we're doing," says owner Morningstar Thomas. "We're definitely spicing things up and bringing a new flair."

Morningstar runs the restaurant with her husband. During the day, she does everything from taking orders to cooking some of the signature dishes. Her and her husband came to Williston for an opportunity to own a business.

"We were in Chicago visiting our my parents, and decided to come up and check it out," says Ronald Thomas. "And when we got here. The things that we heard were untrue. Really it reminds me of my hometown, and we felt like maybe we do something here."

Ronald says when they first came to town, he found a job as a chef and really honed his skills. After doing some cooking competitions in the area, people started to see how good the food was, and that lead them to open the restaurant

"We really have an emphasis on fresh," says Ronald. "Things that we prepare. We try to do the best that we can to add flavor. A spice profile that sets us apart because we make sure every bite is flavorful and affordable."

Ronald says a lot of their recipes have taken eight or nine years to develop between him and his wife. He also hopes to add more employees in the future as the business grows.

The Thomas' say that they're top seller so far has been the Bistro Club.
