Fair Preparations

Just a few days until the North Dakota State Fair opens, so we checked out a few food vendors getting ready for the big opening day.

 

Many fair goers come for the fun, others come for the food. The state fair has 51 food vendors, many of those on wheels. Matt Cranston owns two trucks, and travels from state to state.

 

"I came from River Falls, Wisconsin," says Cranston.

 

Cranston owns two food trucks with his wife and his daughters, the Flowering Onion and Pork Chop on a Stick.

 

Cranston arrived on Sunday, and says he needs a full week to prep before the Friday's opening.

 

"Pretty much takes a good day per trailer to set up, at least," says Cranston.

 

The Flowering Onion owner says he'll have at least 6 to 8 workers help out.

 

"We peel all our onions the night before, as many to keep going until maybe 2, 3 o'clock. I have two full time peelers, then we'll probably, depending on the grandstand, we have to be prepared before and after because all the people come out," says Cranston.

 

Cranston says it takes more than just food delivery to get his trucks ready to go.

 

"You have to hook up the water, the gas for the fryers, and there's a refrigerator in there to hook up the pop machine, the drain for the pop machine, the drain for the air conditioner. We have to completely wash the whole thing inside and out, all the windows, on the floor, fryers got to be cleaned and then you just keep that maintained every night and every morning so it looks perfect," says Cranston.

 

He says hopes the rain holds back for the next few days of preparations.
